Downsizing... sort of... 8-)

First thing this morning it was -23C, feeling like -36C with the wind-chill... brrrrrr..... Over night we had really high winds a blowing in from the north... Dora wasn't liking it one bit, but I was too tired to let her out of her kennel... Eventually I fell asleep amongst her ruckus! Ruby could have cared less...

Empty nest dilemma. Well not really a dilemma, but had to put some thought into making Lasagne for 2! How many noodles? Cut the ground beef in half. What pan?

Pictured is the glass casserole of Lasagne I prepared today, inside the pan I would usually fill for our family. DD1 left 3-4 years ago, then DD2 left last October, but I still filled it. With a son through 17 to 21 years old it would all disappear within 2 days. Now DS moved out at the beginning of this month, so my "vacuum", "bottomless pit", "hollow leg" eater is gone. DH can sure dig in at supper time though, but making a big pan now would be much too much for just the 2 of us. I am hoping that his amount will cover supper tonight, and a left-over for DH to take when working evenings... We shall see...

DD2 just called to invite herself for supper. ...?... She doesn't do Lasagne if she can help it, but I assured her I have a few chicken fingers left over from yesterday's pot-luck that had her name on it, to have with the Caesar Salad and garlic toast. She is happy with that idea... We haven't seen her since last week sometime... The visit will be nice! 8-)

No sewing done today... yet! Had a bad sleep, thus no energy... Sorry Pg... Pg is wanting me to have one of my quilts quilted and bound in 2 weeks... Yikes! 8-)

Hi Myra!! We are in a red zone on the news with our wind chill tonight too.... I hate -40* predictions!!

I am sorry you didn't sleep well. Hopefully tonight you will get well rested and ready to sew the day away.

with the lasangen situtation, make up the big pan, then freeze the leftovers for another meal!! Me an my freezer meals, but I love 'em!! I am always looking for things that are easy to assemble and pull out when I just don't want to cook (which can last weeks sometimes!! lol!!)

Hey Myra, I thought we were cold here. I sure don't envy your temps lately! Another $500 oil bill came yesterday, much too soon after the last one!

I agree with Brenda about the lasagna! Why go to all that trouble if it can't keep you out of the kitchen for at least 6 or 8 meals? I cut mine up in square serving sizes, pop each piece into a square glad-ware container, let them cool off, push the lids on and stick them in the freezer. When I want more time in the sewing room, but still a good homemade hot dinner, I pull a few of those babies out of the freezer, pop them out of the plastic and onto individual plates and crank up the microwave! It's my second favorite thing to make for dinner -- my first of course being reservations!

Looking forward to seeing that quilt you'll have done in 2 weeks...yikes is right!

lasagne sounds like the perfect meal today goven the temps! In our house I make my lasagne in a bread loaf pan. two noddles side by side (snapped off ends) makes a layer its easy to cut and serve and does for two of us really well even though one is a young adult who has a hollow leg! :-)

Just trying to keep you on schedule to have a January project done,not much time left.How did you do today??
Go ahead and make the full pan of lasagna, just let me know and I'll be over to pick up the extra.

We're about to get the deep freeze treatment too -- starting sometime overnight. I've had enough of this winter already!!
Your lasagna sounds like the perfect idea for this cold, cold weather!

Hey Myra, humm having same dilema,,don't know how to cook for 2, hard thing to do after years and years, I too have empty nest and still after 5 months trying to adjust,,,wow,,,and we'll just have to wait to see you quilt all done up...no problem...have a good rest... then you'll be ready to go.. happy weekend.....

Hey GF. You can still make the same you are used to but like someone already said, just freeze some so you don't have to do it all over again for the next batch.
And yes, the loaf pans work great if you are cutting down too.
Ah your a smart girl, you will figure it all out! :-)

Poor you with all that cold weather. we moan over here when it hits freezing, I don't know how I'd cope with the cold you get.
I'd make up the big Lasagne and then freeze the leftovers. You've got a ready made meal then for the days when you don't feel like cooking.

It freezes well ..great for when I go to sewing days out and too tired to cook that night..

That Lasagne looks nice, if I have any left overs this usually goes in the freezer. I hope it gets to warm up for you over there it sure does sounds very cold over there.

My nest has been empty for years and I still make way too much. I always forget what I have frozen so maybe cleaning out the freezer would be the answer. I like Quilt Pixie's idea of using a bread pan.

It is a bit hard to start cooking smaller portions when the birds fly away from home, but often they pop in and then it is good to have cooked the "usual" size of portion.

I am freezing just hearing about how cold it is for you. We haven't had it that bad this winter, or not as bad as other areas in the country. Stay Warm!

just cook a whole batch and freeze part of it...it's always better later anyway...the flavors and seasonings have time to really blend........bbbrrrrrr...i just really don't know how you guys do it!!
