One thing on the menu tonight!

Do any of you hate the time it takes to roll little meat-balls? Are any of you bothered by working with the cold meat in your hands, due to an uncomfortable pain traveling up your arms to your elbows? If so, you are like me!

Around here we eat "meat-cubes" (as my kids call them) instead of meat-balls. I like this method...

Here I have about 2 pounds of ground beef, mixed with what I like in my meat-balls, and flattened to about 1 inch on a baking sheet. I then make about 1 inch pushed in splits with my cleaver across the patty (do not separate your rows)...






Then I do cross cut pushed in splits, and pop the sheet into the oven under the broiler.






When the top of the patty is brown, cut the patty right through into four on one of the splits. Flip the sections over.








Pop the baking sheet back under the broiler to brown the underside... Once browned, cut all apart on your splits...







I use Knorr Oxtail Soup mix for my gravy. Mix package according to soup directions in a oven safe pan. I use a heavy Dutch gravy pan. Whisk to blend well, and spoon the "meat-cubes" into the pot. The soup will thicken nicely for a rich and yummy gravy...










Give a little stir, put the lid on, and pop into the oven at 350*F for 1 to 1+1/2 hours. Stir every half hour if you want. If it thickens too much for your liking you can add a bit of hot water at any point of cooking. ... And there you have it! A nice pot of meat-cubes and gravy!!! 8-)

Sounds yummy, I'll give it a try. I don't like to stick my hands in the meat either. I use a cookie scoop, and I still have to touch the mixture, but just a minimum.

Just me Myra, I was curious about your Monday Mystery, and would love to play along, but I'd better refrain from starting anything new. I counted UFOs earlier this week(after my surgery) and...oh my!
I did pop over and read it tho...looks like such fun! And your meat cubes idea is brillant! I'll have to try that at Christmas. 4 pounds of meatball mixture really is alot of COLD meat! Thanks! Hugs, Finn

Great idea. I hate rolling meatballs so we almost never have them. Winter must be here. We got stuck in the lane last night. Sigh.

Great minds think alike Myra...we had a Sloppy Joe casserole for supper (featuring ground beef of course).
The meatball (meat squares) idea is neat though.....

What a good idea. I'm going to try that for my Swedish meatball recipe. My family loves it but I hate messing with that cold meat!
